EU agrees 'improved' definitions for spirit
By Nicola Carruthers, The Spirits Business
Three bottles of spirits

The European Union has finalised its new Spirit Drinks Regulation, which will include "refined and improved" definitions for spirits.

The EU reached an agreement on 27 November for the new Spirit Drinks Regulation, which outlines rules for the production and labelling of spirits and for the registration and protection of spirits with geographical indications (GI).

"After so many years of discussions, it is a great relief to see the conclusion of the new regulation, as it lays down the rules for the production and labelling of all spirits sold in the EU and for the protection of those EU spirits bearing a geographical indication," said Ulrich Adam, director general...

The Secret to That Bright-Red Drink? Little Bugs
By Robert Simonson, The New York Times
Three American aperitivos that use carmine_ the insect-derived coloring that Campari has replaced in most of its bottlings since 2006. Dried cochineal beetles_ whole and ground_ used to produce the dye known as carmine.
Three American aperitivos that use carmine, the insect-derived coloring that Campari has replaced in most of its bottlings since 2006. Above right, dried cochineal beetles, whole and ground, used to produce the dye known as carmine.

Campari stopped using a traditional dye made from insects, but makers of American aperitivos are taking it back up.

There has been something of a boom in American aperitivos in the last few years, with new products coming out of Colorado, California and Washington, D.C. They all have a few things in common: a slight bitterness and a bright-red color. And bugs.

Yes, bugs. Many of these drinks use the natural dye carmine, which is extracted from the cochineal, a tiny insect, to achieve their vibrant hue. This is not some weird new craft-distilling trend: Cochineals (KAHCH-i-neels), native to the Americas, have been used for centuries to lend color to everything from fabric to cosmetics to food.

For decades, Campari was the most famous spirit to use crushed cochineals for coloring. The company decided in 2006 to discontinue its use in most of its bottlings, in favor of artificial colors, because of what it called the "uncertainty of supply of the natural colorant." That would have seemed to be a death knell for the insect's future in liquor.

Lindores Abbey discovers medieval still
By Melita Kiely, The Spirits Business
Gary Haggart _left__ distillery manager_ and Drew McKenzie Morris _left_ beside what is believed to be a medieval whisky still.
Gary Haggart, left, distillery manager, and Drew McKenzie Morris, left, beside what is believed to be a medieval whisky still.

The discovery at the Fife-based Scotch whisky distillery is believed to be an installation used for distilling during medieval times.

Archaeologists who were present at the dig confirmed the structure's features are "characteristic" of traditional kiln stills used at the time, and also found residue inside that "is certainly in keeping" with brewing and distilling from medieval times.

Traces of charcoal, barley, oats, wheat and pottery were also found within the stone structure, which have been backdated to medieval times when monks distilled whisky. Read more
